Update on New Infused Honey
QueenBee here. The team has been busy working in the lab on the new infused honey. While they aren’t ready to make a formal announcement about the new honey, I thought you’d appreciate an update.
Moisture Content for New Infused Honey
During their research, the guys found that they can’t come out with a peach infused honey in the time frame we promised. John Wright explains it like this:
Honey has to stay below 18% moisture content in order to be shelf stable. We found that we would have to go above that in order to impart a full peach flavor profile. We do not want to compromise the honey’s shelf life in order to do that.
What Direction Are You Going in?
Good news! What our team found is that we can produce a citrus-flavored honey within the time frame we promised, and citrus-flavored honeys were highly regarded on our Infused Honey Survey. Without divulging a secret, let me say that the citrus-flavor the guys are working on is going to be fairly unique and you are going to love it! Will it be orange-flavored? lime-flavored? lemon-flavored? Stay tuned for the unveiling!!!
