Greens with Fat Back and Onions
Ingredients:
- 1-2 cups of smoked fatty bacon cubes (I buy mine from a local farm where they have natural, farm-smoked bacon.)
- 1 large onion roughly chopped
- 3-4 quarts of mixed greens, torn (Kale, Swiss Chard, Turnip Greens, Mustard Greens, etc.)
- 1 quart water/Organic Chicken Stock
Directions:
- Pull the green leaves away from the tough stems. Roughly tear the leaves. (I wash my greens and store them in the refrigerator when I harvest them.)
- Place the onion, fatty bacon cubes, and water/stock in the pan.
- Begin to add your greens. They will wilt down, and you can add more.
- Bring pot to the boil and then turn down to low. Simmer green mixture, stirring occasionally, until the greens are tender.
- Reserve the pot liquor for dipping corn bread. Personally, I use the pot liquor as the base for making beans, so I freeze it.
Great with hot sauce.
Serves 4-6 people.
